"I celebrated my 40th birthday at Archipelago, and it turned out to be a truly wonderful and memorable evening. From the moment we arrived, the service was warm, thoughtful, and incredibly attentive. The entire team made us feel genuinely welcomed and cared for. Chef Aaron was especially thoughtful during the wine pairing, patiently helping me try different wines and adjusting the selections to find the flavors that best matched my preferences. That level of personal attention made the experience even more special. Every dish was carefully crafted. The courses were not necessarily designed to create an immediate “wow” moment with the first bite; instead, each dish had its own character, depth, and story. I really appreciated the creativity behind the menu and how each course reflected the cultural inspirations behind it. One of the most memorable moments was meeting one of the chefs, whose Chinese name is Hailian. He has Inner Mongolian heritage, and when he learned that we were Chinese guests, he was genuinely excited and said he was happy to have a chance to practice Chinese. He spent a lot of time chatting with us in Chinese (with some occasional English help when he needed more vocabulary, which was very charming). His enthusiasm and warmth added such a personal touch to the evening. I have seen some comments online saying that Archipelago is a restaurant worth visiting once, but perhaps not necessarily returning to. After my first visit, I have to respectfully disagree. The combination of the food, the storytelling, and the hospitality made me want to come back again. I’m looking forward to experiencing Archipelago again after the renovation, and hopefully seeing Chef Aaron, Hailian, and the entire team again. Thank you for making my 40th birthday such a meaningful and unforgettable night."

"Archipelago serves unique PNW-Filipino fusion cooking that you simply can’t find at any other restaurant. Their strong locavore ethos forces them to recreate Filipino flavors without tropical ingredients. Limitation breeds creativity. That said, the level of cooking is not yet at the level that commands $275 per person. At that price point I expect a strong one-star or a more affordable two-star, but the food felt a low one-star for me. To be clear, everything tasted good, but I expected more. The savory dishes lacked the techniques to maximally bring out flavor. They tasted blurry and muddled, such as the sinigang that didn’t stand up to the beet noodles, or a rice mush underneath a rather ordinary-tasting chicken, or the turmeric lentils (I think my weeknight dal tastes better…) that didn’t quite gel with the adobo lamb. The kitchen needs to study and apply more fine dining techniques to make the food alone justifiable at that price. The sweets were the real highlights, including the Douglas fir sorbet in the amuse, the impossibly light and crispy turon, and the surprisingly nutty polvoron made with nixtamalized sunflower seeds. It was fun to see fig leaf used instead of coconut (really, I can’t think of a more perfect substitution), turnip cooked down in syrup to mimic banana, “chocolate” made from acorns(I might’ve misremembered), and so on. Archipelago makes up for the high price through Unreasonably Hospitality. They will tailor your meal to whatever your preferences may be, as long as you communicate it far in advance, which must be a huge pain for a restaurant with around a dozen seats. They’ll likewise tailor the wine pairing—all local wine—to your tastes. They’ll top you up on the savory main until you feel contentedly full with just enough room for dessert, taking into account people’s different appetites. They’ll make an effort to talk with the guests to get to know them for the few hours of the meal. There was a strong human component to the service. The only aspect of service I could’ve done without was the spiel about the dishes. Archipelago has this gimmick where their dishes are inspired by significant events, landmarks, and figures in Filipino history, especially in the PNW. However, the connections are often too much of a stretch, to the point of being eyeroll-worthy. Imagine if someone said “the road to independence was difficult and rocky, and so we present to you rocky road ice cream” and they repeat this a few times. Nope. Absolutely not. It’d be more tasteful to educate folks on the history and significance of the traditional foods that inspired the dish. Overall, I do think Archipelago is worth visiting at least once for the sheer uniqueness. You won’t find anything like it anywhere else in the world. Tourists should book this restaurant if they can afford it, as long as they have no expectation of value-for-money."

"10/10! Excellent Fillipino tasting menu, which paired perfectly with the Pacific north west wines. Yes this place is expensive, but the staff are extremely accommodating to ensure that you have the best possible experience. Unlike other tasting menus, there is one course where you are offered extra portions to ensure that you do not leave hungry. The flavors or fantastic with the banana ketchup, being a standout. Definitely I must do if you’re in Seattle and enjoy tasting menus. The restaurant itself is very relaxed, casual without feeling pretentious."
